No-Cook Chicken al Pastor Tacos - Program Approved

I love TACOS!
I'll say it again, "I LOVE tacos!" Beef tacos, chicken tacos, pork tacos - even Brussels sprout tacos (yes, it's a thing and they're amazing). I haven't met too many tacos I don't like (you can keep your brain and tongue tacos), but my all-time favorite is the simple and delicious al Pastor taco. Traditionally made by layering seasoned pork, onions and pineapple on a spit and roasting slowly, the mix of salty, sweet and savory makes me, and my belly, super happy.
I'm not sure if you have a spit laying around your house, but we definitely don't have one here. And - on busy week nights running kiddos here and there, or racing home from work to enjoy dinner with your family, who would have time for that anyway? My No-Cook Chicken al Pastor "recipe" will have tacos on your plate in minutes without you having to drag out a single pot or pan. Added bonus - they fit perfectly into most of our Focused Fitness nutrition plans.
Ingredients
1 - Corn Tortilla (Mission Super Soft, Super-Size)
2 oz. - Rotisserie Chicken (shredded or torn)
1 oz. - Fresh Pineapple (diced)
White Onion (diced)
Chopped Cilantro (chopped)
Lime Wedges
*1/2 oz. - Cheese (aged, semi-hard, grated) if your nutrition plan allows.
Place rotisserie chicken on top of a corn tortilla, top with pineapple, onion, cilantro and a squeeze of fresh lime juice. Fold or roll. Repeat as many times as needed to hit nutrient requirements on your personal nutrition plan. Most will have two tacos.
